Ingredients
Peanut Butter Bars:
½ cup butter
¾ cup smooth peanut butter
1 cup low-carb granular brown sweetener
½ tsp salt
½ tbsp vanilla extract
2 large eggs
1 cup fine-blanched almond flour
Peanut Butter Icing:
½ cup low-carb powdered sweetener
¼ cup smooth peanut butter
4 tbsp unsweetened almond milk
½ tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Line an 8×8″ pan with parchment.
In a saucepan, melt butter and peanut butter together. Remove from heat.
Stir in sweetener, salt, and vanilla. Let cool slightly, then mix in eggs.
Add almond flour and stir until fully combined.
Pour into pan and bake for 20–25 minutes. Let cool completely.
For icing, whisk all ingredients until smooth. Spread evenly over cooled bars.
Chill for 10–15 minutes to set before slicing.
