  • 8 oz Pasta (Linguine or Spaghetti)

  • 1 Lemon (zested and juiced)
  • 1 Cup Chicken Broth
  • 1 Cup Cherry Tomatoes, halved
  • 1/2 Cup Fresh Basil, chopped
  • Salt and Pepper to taste
  • Grated Parmesan Cheese (optional)

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Once boiling, add your pasta and cook according to the package instructions, around 8-10 minutes for al dente. Reserve about a cup of pasta water and drain the rest.
  2. Sauté the Chicken: Heat 2 tablespoons of olive oil in a large skillet. Season chicken breasts with salt and pepper. Add chicken and cook for about 5-7 minutes on each side until golden brown and cooked through.
  3. Let it Rest: Transfer the chicken to a cutting board to rest for about 5 minutes.
  4. Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds. Add cherry tomatoes and cook for about 3-4 minutes until they burst.
  5. Add the Broth and Lemon: Pour in chicken broth, lemon juice, and zest. Simmer on low heat for about 5 minutes.
  6. Combine Everything: Add the cooked pasta to the skillet and toss to combine. Use reserved pasta water if needed.
  7. Slice the Chicken: Slice the rested chicken and fold it into the pasta. Add fresh basil and toss again.
  8. Final Touches: Taste and adjust seasoning. Serve with grated Parmesan if desired.

Feel free to customize with fresh vegetables or additional herbs. This dish is best served fresh but can be prepped ahead of time.
