- 1 cup fresh strawberries, hulled and chopped
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup milk
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup brown sugar
- ½ cup rolled oats
- ½ teaspoon ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the muffin tin by greasing it or lining it with muffin liners.
- Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
- Whisk together the melted butter, egg, vanilla extract, and milk in another bowl.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the chopped strawberries gently.
- Mix the brown sugar, rolled oats, flour, ground cinnamon, and a pinch of salt for the crumble topping in a separate bowl.
- Add in the melted butter and mix until resembling coarse crumbs.
- Spoon the muffin batter into the prepared muffin tin, filling it about two-thirds full, and top with the crumble mixture.
- Bake for about 18-22 minutes or until a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
Store leftovers in an airtight container for 2-3 days or freeze wrapped in plastic wrap.
