Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with a little butter.
- Mix the flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl.
- Combine the melted butter, milk, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and mix gently with a spatula.
- Fold in the diced peaches.
- Prepare the crumble by mixing brown sugar, flour, oats, cinnamon, and cold butter until resembling coarse crumbs.
- Divide the muffin batter among the muffin cups, and sprinkle the crumble mixture on top.
- Bake for 20–25 minutes, or until golden brown.
- Allow the muffins to cool before transferring to a wire rack.
