Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh peaches, diced
- For the crumble:
- 1/2 cup brown sugar
- 1/4 cup flour
- 1/4 cup rolled oats
- 1/2 teaspoon cinnamon
- 2 tablespoons cold butter
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with a little butter.
- Mix together the flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl.
- Combine melted butter with milk, eggs, and vanilla extract in another bowl.
- Combine the wet and dry mixtures gently with a spatula.
- Add the diced peaches and fold gently into the batter.
- Prepare the crumble by mixing brown sugar, flour, oats, cinnamon, and cold butter until crumbly.
- Fill the muffin cups with batter and sprinkle the crumble on top.
- Bake for 20–25 minutes, or until golden brown.
- Cool for about 5 minutes before transferring to a wire rack.
Notes
Serve warm with butter or whipped cream. Great for breakfast or as a snack!
