Description

Delightful muffins filled with sun-ripened peaches and topped with a buttery crumble, reminiscent of summer days in grandma’s kitchen.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh peaches, diced
  • For the crumble:
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 2 tablespoons cold butter

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with a little butter.
  2. Mix together the flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Combine melted butter with milk, eggs, and vanilla extract in another bowl.
  4. Combine the wet and dry mixtures gently with a spatula.
  5. Add the diced peaches and fold gently into the batter.
  6. Prepare the crumble by mixing brown sugar, flour, oats, cinnamon, and cold butter until crumbly.
  7. Fill the muffin cups with batter and sprinkle the crumble on top.
  8. Bake for 20–25 minutes, or until golden brown.
  9. Cool for about 5 minutes before transferring to a wire rack.

Notes

Serve warm with butter or whipped cream. Great for breakfast or as a snack!
