Ingredients

- 1.5 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup key lime juice (freshly squeezed)
- 1 teaspoon lime zest
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Lime zest for garnish (to taste)
Instructions
- Combine the graham cracker crumbs and granulated sugar in a large mixing bowl.
- Pour in the melted butter and mix until well combined.
- Press the crumb mixture into mini pie pans or muffin tin, then pop the crusts into the freezer.
- In another bowl, combine the sweetened condensed milk, key lime juice, and lime zest, stirring gently until blended.
- Whip the heavy cream and powdered sugar on medium speed until soft peaks form.
- Fold the whipped cream into the key lime mixture gently.
- Remove the crusts from the freezer and divide the key lime filling among them.
- Chill the pies in the fridge for at least 3 hours or overnight.
- Garnish with lime zest before serving.
Notes
These mini pies can last about 3-4 days in the fridge. They can also be frozen for up to a month.
