Description

Delightfully creamy mini cheesecakes that are perfect for every occasion, combining a buttery crust and luscious filling.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Press into a lined muffin tin.
  3. Beat cream cheese until fluffy, then mix in sugar, vanilla, and eggs one at a time. Fold in sour cream.
  4. Spoon the filling over the crusts, filling each muffin cup about 3/4 full. Bake for 18-20 minutes.
  5. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours.
