Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens (lettuce, cabbage, etc.)
  • 1 cup shredded carrots
  • 1 cup sliced almonds
  • 1/2 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients.
  2. Make the dressing by whisking together sesame oil, soy sauce, rice vinegar, and honey.
  3. Toss the greens and shredded carrots in a large bowl.
  4. Add the shredded chicken and fold it in gently.
  5. Top with sliced almonds and green onions, then toss again.
  6. Drizzle the dressing over the salad and toss to coat.
  7. Finish with chopped cilantro and give it one last toss.
  8. Plate the salad in a serving bowl or plate.
