- 1/4 cup cilantro, chopped
- 1 jalapeño, minced (optional)

Instructions
- Marinate the chicken: In a medium bowl, whisk together the honey, lime juice, lime zest, olive oil, salt, and pepper until smooth. Add the chicken breasts, ensuring they are well-coated. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes.
- Prepare the mango salsa: In a separate bowl, combine the diced mango, red onion, cilantro, and jalapeño. Squeeze lime juice on top and season with salt—stir to combine, then set aside.
- Heat your grill: Preheat your grill or grill pan over medium-high heat.
- Cook the chicken: Once your grill is hot, place the marinated chicken breasts on the grill. Cook for 5-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- Rest your chicken: Remove the chicken from the grill and let it rest for 5 minutes.
- Plate it up: Slice the chicken against the grain, serve on a bed of rice with mango salsa on top.
Notes
For an extra kick, you can add chili powder or cayenne pepper to the marinade.
