Ingredients
8 oz cooked protein pasta (penne or rotini)
1 lb cooked, shredded chicken breast
½ cup plain Greek yogurt
¼ cup buffalo hot sauce (like Frank’s RedHot)
¼ cup light cream cheese or Neufchâtel, softened
½ cup reduced-fat shredded cheddar
2 cloves garlic, minced
Salt & pepper to taste
Green onions or parsley for garnish (optional)
Instructions
Cook pasta according to package instructions. Reserve ¼ cup of pasta water before draining.
In a large skillet, sauté garlic until fragrant. Stir in buffalo sauce, cream cheese, and Greek yogurt until smooth and creamy.
Add shredded chicken and cooked pasta. Toss to coat, adding a splash of pasta water if needed to loosen the sauce.
