Description

Ingredients

  • ½ Cup oil
  • 2 Eggs
  • ½ Cup milk
  • 1 Tsp vanilla extract
  • 1 Cup sugar
  • 2 Tsp baking powder
  • 2 Cups flour
  • 2 Cups mango, diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin by greasing or lining it with paper liners.
  3. Mix the oil, eggs, milk, vanilla extract, and sugar in a large bowl until smooth.
  4. Add the flour and baking powder to the wet mixture, stirring until just combined.
  5. Fold in the diced mango until evenly distributed.
  6. Scoop the batter into muffin cups, filling them about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
