Ingredients

- ½ Cup oil
- 2 Eggs
- ½ Cup milk
- 1 Tsp vanilla extract
- 1 Cup sugar
- 2 Tsp baking powder
- 2 Cups flour
- 2 Cups mango, diced
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your muffin tin by greasing or lining it with paper liners.
- Mix the oil, eggs, milk, vanilla extract, and sugar in a large bowl until smooth.
- Add the flour and baking powder to the wet mixture, stirring until just combined.
- Fold in the diced mango until evenly distributed.
- Scoop the batter into muffin cups, filling them about 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
