  • 1 medium zucchini (sliced lengthwise)
  • 1 cup cooked chickpeas (canned, rinsed, and drained)
  • 100 g feta cheese (crumbled)
  • 1 tablespoon olive oil (for grilling the zucchini)
  • Salt and black pepper (to taste)
  • ½ cup plain yogurt (Greek yogurt recommended)
  • 1 tablespoon fresh herbs (parsley, mint, or dill, chopped finely)
  • 1 teaspoon lemon juice (freshly squeezed)

Instructions

  1. Prepare the Zucchini: Start by slicing your medium zucchini lengthwise into long, thin strips (about 1/4 inch thick). Toss them in a bowl with olive oil, salt, and pepper.
  2. Preheat the Grill: Heat your grill pan or outdoor grill to medium-high. If unavailable, a hot skillet works too.
  3. Grill the Zucchini: Cook zucchini on the grill for about 3-4 minutes on each side until grill marks appear.
  4. Prep the Chickpeas: Rinse and drain chickpeas, then mash some with a fork in a bowl. Stir in crumbled feta, chopped herbs, and lemon juice.
  5. Assemble the Wraps: Lay a tortilla on a clean surface, spread the chickpea mixture down the center, and top with grilled zucchini strips.
  6. Spread with Yogurt Sauce: Drizzle yogurt sauce on top of the zucchini.
  7. Wrap It Up: Roll the wrap tightly by folding in the sides and securing it.
  8. Optional Grilling: For added crunch, grill the wrapped tortillas for an additional 2-3 minutes on each side.

Notes
