Ingredients

- 2 ripe peaches, halved and pitted
- 1 cup fresh blueberries
- 4 cups mixed greens (arugula, spinach, or your choice)
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, toasted
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Fire up your grill. Preheat your grill to medium-high heat.
- Prep the peaches. Slice your peaches in half, remove the pits, and brush with olive oil.
- Grill the peaches. Place peach halves cut side down and grill for 4-5 minutes. Flip and grill for another 2 minutes.
- Toast the walnuts. In a dry skillet, toast walnuts over medium heat for 3-5 minutes until golden.
- Assemble the base. Toss mixed greens with salt and pepper in a large bowl.
- Add the blueberries and feta. Slice grilled peaches and scatter over greens, add blueberries and feta.
- Drizzle and toss. Whisk balsamic vinegar and olive oil, drizzle over salad, and toss gently.
- Top with toasted walnuts. Sprinkle walnuts over the top for added crunch.
Notes
For a fun twist, try adding grilled chicken or shrimp for protein, or substitute the feta with goat cheese.
