A vibrant and refreshing salad featuring grilled peaches, blueberries, mixed greens, and feta cheese, perfect for summer gatherings.


Ingredients

  • 2 ripe peaches, halved and pitted
  • 1 cup fresh blueberries
  • 4 cups mixed greens (arugula, spinach, or your choice)
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Fire up your grill. Preheat your grill to medium-high heat.
  2. Prep the peaches. Slice your peaches in half, remove the pits, and brush with olive oil.
  3. Grill the peaches. Place peach halves cut side down and grill for 4-5 minutes. Flip and grill for another 2 minutes.
  4. Toast the walnuts. In a dry skillet, toast walnuts over medium heat for 3-5 minutes until golden.
  5. Assemble the base. Toss mixed greens with salt and pepper in a large bowl.
  6. Add the blueberries and feta. Slice grilled peaches and scatter over greens, add blueberries and feta.
  7. Drizzle and toss. Whisk balsamic vinegar and olive oil, drizzle over salad, and toss gently.
  8. Top with toasted walnuts. Sprinkle walnuts over the top for added crunch.

Notes

For a fun twist, try adding grilled chicken or shrimp for protein, or substitute the feta with goat cheese.
