Ingredients

  • 1 medium zucchini, sliced into rounds
  • 1 medium red bell pepper, sliced into strips
  • 1 medium yellow bell pepper, sliced into strips
  • 1 medium red onion, sliced into rings
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 large whole wheat wraps or tortillas
  • 1 cup hummus
  • 1 cup fresh spinach or arugula
  • 1/2 cup Greek yogurt (for sauce)
  • 1 tablespoon fresh lemon juice (for sauce)
  • 1 teaspoon lemon zest (for sauce)
  • 1 tablespoon fresh dill, chopped (for sauce)
  • 1 tablespoon fresh parsley, chopped (for sauce)
  • 1 clove garlic, minced (for sauce)
  • Salt and pepper, to taste (for sauce)

Instructions

  1. Preheat the Grill: Fire up your grill to medium-high heat.
  2. Prep the Veggies: In a large mixing bowl, toss the zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes with olive oil, salt, and pepper.
  3. Grill the Veggies: Once your grill is hot, place the seasoned veggies directly on the grill grates. Grill for about 6–8 minutes, flipping halfway through.
  4. Make the Zesty Herb Sauce: In a mixing bowl, combine Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper. Mix well.
  5. Assemble Your Wraps: Spread hummus evenly onto each whole wheat wrap. Layer spinach or arugula on top, then add the grilled veggies and drizzle with zesty herb sauce.
  6. Roll It Up: Tightly roll your wrap while tucking in the sides to create a neat package.
  7. Optional – Grill the Wrap: For extra crispiness, toss the assembled wrap back on the grill for 1–2 minutes on each side.
