Ingredients

  • 1 medium zucchini, sliced into rounds
  • 1 medium red bell pepper, sliced into strips
  • 1 medium yellow bell pepper, sliced into strips
  • 1 medium red onion, sliced into rings
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 large whole wheat wraps or tortillas
  • 1 cup hummus (store-bought or homemade)
  • 1 cup fresh spinach or arugula
  • 1/2 cup Greek yogurt (for the zesty herb sauce)
  • 1 tablespoon fresh lemon juice (for the zesty herb sauce)
  • 1 teaspoon lemon zest (for the zesty herb sauce)
  • 1 tablespoon fresh dill, chopped (for the zesty herb sauce)
  • 1 tablespoon fresh parsley, chopped (for the zesty herb sauce)
  • 1 clove garlic, minced (for the zesty herb sauce)
  • Salt and pepper, to taste (for the zesty herb sauce)

Instructions

  1. Prep your veggies: Start by washing all your veggies. Slice the zucchini into rounds, the bell peppers into strips, and the onion into rings. Halving the cherry tomatoes is also key to keeping them juicy while grilling.
  2. Season the veggies: In a large bowl, toss the sliced veggies with the olive oil, salt, and pepper until evenly coated.
  3. Preheat the grill: Preheat the grill to medium-high heat. A grill pan or skillet can also be used if a grill isn’t available.
  4. Grill the veggies: Place the prepared veggies on the grill in a single layer. Let them cook for about 3-4 minutes, then give them a flip. Cook for an additional 3-4 minutes until tender but still crisp.
  5. Make the zesty herb sauce: In a small bowl, combine the Greek yogurt, lemon juice, lemon zest, dill, parsley, garlic, salt, and pepper. Whisk until smooth and creamy.
  6. Prep the wrap: Spread a generous layer of hummus over the whole wheat wrap.
  7. Layer the veggies: Once your veggies are grilled, layer them on one side of the wrap.
  8. Add the greens: Top the veggies with a handful of fresh spinach or arugula.
  9. Drizzle the zesty sauce over the layers.
  10. Wrap and roll: Fold in the edges of the wrap and roll tightly from one end to the other.
  11. Slice and serve: Use a sharp knife to slice the wrap in half, showcasing the filling.

Notes
