- 1 lb grilled chicken, sliced
- 1 cup lettuce, shredded
- 1 cup tomatoes, diced
- 1/2 cup cheddar cheese, shredded
- 1/4 cup chipotle ranch dressing
- 1/2 cup black beans, drained and rinsed
- 1/4 cup corn (optional)
Instructions
- Grill the chicken: Season it with olive oil, salt, pepper, and your favorite spices. Preheat your grill to medium heat and cook for 6-7 minutes per side, until the internal temperature reaches 165°F. Let it rest before slicing.
- Prepare your ingredients: Shred the lettuce, dice the tomatoes, and shred the cheddar.
- Make the chipotle ranch sauce: Blend 1/4 cup of ranch dressing with 1-2 tablespoons of chipotle in adobo until smooth.
- Assemble the burritos: On a tortilla, layer grilled chicken, shredded lettuce, diced tomatoes, cheese, black beans, and corn if using. Drizzle with chipotle ranch sauce.
- Wrap it up: Fold in the sides of the tortilla, then roll from the bottom tightly.
- Grill or toast the burrito: Grill on medium heat for 2-3 minutes per side until golden brown, if desired.
