Description

Ingredients

  • 8 ounces pasta (such as penne or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
  2. Prepare the vegetables: chop the cherry tomatoes, cucumbers, red onions, and olives.
  3. Mix the dressing in a small bowl with olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Combine everything in a large mixing bowl, adding the cooled pasta, chopped vegetables, olives, and crumbled feta.
  5. Dress the salad with the prepared dressing and toss gently.
  6. Chill in the fridge for at least 30 minutes before serving for best flavors.

Notes
