Ingredients

- 8 ounces pasta (such as penne or farfalle)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
- Prepare the vegetables: chop the cherry tomatoes, cucumbers, red onions, and olives.
- Mix the dressing in a small bowl with olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Combine everything in a large mixing bowl, adding the cooled pasta, chopped vegetables, olives, and crumbled feta.
- Dress the salad with the prepared dressing and toss gently.
- Chill in the fridge for at least 30 minutes before serving for best flavors.
