Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken by mixing Greek yogurt, olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts and refrigerate for at least 30 minutes.
  2. Cook rice or quinoa according to package instructions.
  3. Prepare the veggies by chopping and halving as needed. Soak red onions in cold water if desired.
  4. Cook the chicken in a hot grill pan for 6-7 minutes on each side until golden brown and cooked through.
  5. Slice the chicken, then assemble your bowls starting with grains, followed by chicken slices and colorful veggies. Top with olives, feta, and parsley.
