Ingredients

  • 500g Apricots
  • 75g Sugar
  • 2 Slices of Focaccia
  • 2 tbsp Apricot Jam
  • 80g Wafer Thin Ham
  • Salt & Pepper (to taste)
  • Olive Oil (for drizzling)
  • 1 tbsp Bacon Fat
  • 80g Soft Goat Cheese
  • 1 Handful Rocket (Arugula)
  • 1 tsp Lemon Juice
  • ½ tbsp Extra-Virgin Olive Oil

Instructions

  1. Prepare the Apricot Jam: Wash and pit the apricots, place them with sugar in a saucepan, and cook over medium heat until thickened.
  2. Toast the Focaccia: Slice focaccia, drizzle with olive oil and bacon fat, and toast until golden.
  3. Layer the Sandwich: Spread apricot jam on the bottom slice, add ham and crumbled goat cheese.
  4. Add Freshness: Top with rocket, drizzle with lemon juice and olive oil, and season with salt and pepper.
  5. Finish It Up: Press the top slice of focaccia onto the layers and let it sit briefly if desired.

Notes

For a smoother jam, blend after cooling. Adjust seasoning to taste.
