- 500g Apricots
- 75g Sugar
- 2 Slices of Focaccia
- 2 tbsp Apricot Jam
- 80g Wafer Thin Ham
- Salt & Pepper (to taste)
- Olive Oil (for drizzling)
- 1 tbsp Bacon Fat
- 80g Soft Goat Cheese
- 1 Handful Rocket (Arugula)
- 1 tsp Lemon Juice
- ½ tbsp Extra-Virgin Olive Oil
Instructions
- Prepare the Apricot Jam: Wash and pit the apricots, place them with sugar in a saucepan, and cook over medium heat until thickened.
- Toast the Focaccia: Slice focaccia, drizzle with olive oil and bacon fat, and toast until golden.
- Layer the Sandwich: Spread apricot jam on the bottom slice, add ham and crumbled goat cheese.
- Add Freshness: Top with rocket, drizzle with lemon juice and olive oil, and season with salt and pepper.
- Finish It Up: Press the top slice of focaccia onto the layers and let it sit briefly if desired.
Notes
For a smoother jam, blend after cooling. Adjust seasoning to taste.
