Description

Ingredients

  • Protein (Ground Beef, Turkey, or Chicken)
  • 1 medium Onion, finely chopped
  • 34 cloves Fresh Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 cups Seasonal Vegetables (zucchini, bell peppers, etc.)
  • 1 tablespoon Fresh Herbs (parsley, thyme, or basil)
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • Broth or Cream as needed (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat and add the onions, sauté until translucent.
  3. Add the minced garlic and sauté for an additional minute.
  4. Combine ground meat, sautéed onions, garlic, shredded seasonal veggies, and spices in a mixing bowl.
  5. Roll about two tablespoons of the mixture into balls and place on a parchment-lined baking sheet.
  6. Bake in the preheated oven for 20-25 minutes until cooked through.

Notes

For a cheesy flavor, mix in some grated Parmesan. These meatballs can be frozen and stored in a freezer-friendly container for about three months.
