- Protein (Ground Beef, Turkey, or Chicken)
- 1 medium Onion, finely chopped
- 3–4 cloves Fresh Garlic, minced
- 2 tablespoons Olive Oil
- 2 cups Seasonal Vegetables (zucchini, bell peppers, etc.)
- 1 tablespoon Fresh Herbs (parsley, thyme, or basil)
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- Broth or Cream as needed (for sauce)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium heat and add the onions, sauté until translucent.
- Add the minced garlic and sauté for an additional minute.
- Combine ground meat, sautéed onions, garlic, shredded seasonal veggies, and spices in a mixing bowl.
- Roll about two tablespoons of the mixture into balls and place on a parchment-lined baking sheet.
- Bake in the preheated oven for 20-25 minutes until cooked through.
Notes
For a cheesy flavor, mix in some grated Parmesan. These meatballs can be frozen and stored in a freezer-friendly container for about three months.
