- 1 large egg
- 1/4 cup apple cider

- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- Extra butter for brushing
- Spiced sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg until fully combined.
- Cream the butter and sugars: In a separate bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, cider, and vanilla extract until well combined.
- Incorporate the dry ingredients gradually to the wet mixture until just combined.
- Prepare the cream cheese filling by beating softened cream cheese and powdered sugar until smooth.
- Assemble the cookies by taking a tablespoon of dough, flattening it, placing a teaspoon of cream cheese mixture in the center, and sealing the dough around it.
- Brush with melted butter and sprinkle with spiced sugar mixture.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool for 5 minutes on a baking sheet before transferring to a wire rack.
Notes
These cookies can be frozen before baking; just add a couple of extra minutes to the baking time if baking from frozen.
