  • 1/4 cup apple cider
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • Extra butter for brushing
  • Spiced sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg until fully combined.
  3. Cream the butter and sugars: In a separate bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg, cider, and vanilla extract until well combined.
  5. Incorporate the dry ingredients gradually to the wet mixture until just combined.
  6. Prepare the cream cheese filling by beating softened cream cheese and powdered sugar until smooth.
  7. Assemble the cookies by taking a tablespoon of dough, flattening it, placing a teaspoon of cream cheese mixture in the center, and sealing the dough around it.
  8. Brush with melted butter and sprinkle with spiced sugar mixture.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Cool for 5 minutes on a baking sheet before transferring to a wire rack.

Notes

These cookies can be frozen before baking; just add a couple of extra minutes to the baking time if baking from frozen.
