Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped rhubarb, granulated sugar, and cornstarch in a large mixing bowl. Let it sit for 10 minutes.
  3. Mix the rolled oats, all-purpose flour, brown sugar, and salt in another bowl. Add the softened butter and mix until crumbly.
  4. Spread the rhubarb mixture evenly in a baking dish and top with the oat mixture.
  5. Bake for 45-50 minutes until golden brown.
  6. Cool for 15-20 minutes before serving.
