- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped rhubarb, granulated sugar, and cornstarch in a large mixing bowl. Let it sit for 10 minutes.
- Mix the rolled oats, all-purpose flour, brown sugar, and salt in another bowl. Add the softened butter and mix until crumbly.
- Spread the rhubarb mixture evenly in a baking dish and top with the oat mixture.
- Bake for 45-50 minutes until golden brown.
- Cool for 15-20 minutes before serving.
