- 1 teaspoon baking powder
- 3/4 teaspoon baking soda

- 1 cup pumpkin puree
- 1/2 cup avocado oil or melted refined coconut oil
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup granulated sugar
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 3/4 cup packed powdered sugar
- 1/4 cup almond milk (for glaze)
- 1 tablespoon dairy-free butter
- 1/2 teaspoon vanilla extract (for glaze)
- Pinch of sea salt (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Gather a donut baking pan and spray it with non-stick spray or brush it with oil.
- Mix dry ingredients in a large bowl: gluten-free flour blend, baking powder, baking soda, sea salt, cinnamon, ginger, and nutmeg.
- Combine wet ingredients in another bowl: pumpkin puree, avocado oil, brown sugar, eggs, granulated sugar, almond milk, and vanilla extract.
- Blend the wet mixture into the dry ingredients, folding gently until just combined.
- Fill each donut cavity about halfway using a piping bag.
- Bake for about 15-18 minutes, or until a toothpick comes out clean.
- Cool the donuts in the pan for 5 minutes, then transfer to a wire rack.
- Make the glaze by whisking together the powdered sugar, almond milk, dairy-free butter, and vanilla extract.
- Glaze the cooled donuts and let them set.
Notes
Optional toppings include cinnamon sugar for added flavor. Perfect for sharing or cozy gatherings.
