Ingredients

  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup avocado oil or melted refined coconut oil
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 3/4 cup packed powdered sugar
  • 1/4 cup almond milk (for glaze)
  • 1 tablespoon dairy-free butter
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of sea salt (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Gather a donut baking pan and spray it with non-stick spray or brush it with oil.
  3. Mix dry ingredients in a large bowl: gluten-free flour blend, baking powder, baking soda, sea salt, cinnamon, ginger, and nutmeg.
  4. Combine wet ingredients in another bowl: pumpkin puree, avocado oil, brown sugar, eggs, granulated sugar, almond milk, and vanilla extract.
  5. Blend the wet mixture into the dry ingredients, folding gently until just combined.
  6. Fill each donut cavity about halfway using a piping bag.
  7. Bake for about 15-18 minutes, or until a toothpick comes out clean.
  8. Cool the donuts in the pan for 5 minutes, then transfer to a wire rack.
  9. Make the glaze by whisking together the powdered sugar, almond milk, dairy-free butter, and vanilla extract.
  10. Glaze the cooled donuts and let them set.

Notes

Optional toppings include cinnamon sugar for added flavor. Perfect for sharing or cozy gatherings.
