Ingredients

  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon

  • 1 cup pumpkin puree
  • 1/2 cup avocado oil or melted refined coconut oil
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 3/4 cup packed powdered sugar
  • 1/4 cup almond milk (for glaze)
  • 1 tablespoon dairy-free butter
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of sea salt (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Gather a donut baking pan and spray it with non-stick spray or brush with oil.
  3. Mix together the gluten-free flour blend, baking powder, baking soda, sea salt, cinnamon, ginger, and nutmeg in a large bowl.
  4. Combine pumpkin puree, avocado oil, brown sugar, eggs, granulated sugar, almond milk, and vanilla extract in another bowl and whisk.
  5. Blend the wet mixture into the dry ingredients and fold gently until just combined.
  6. Fill each donut cavity about halfway using a piping bag or ziploc bag.
  7. Bake in the preheated oven for 15-18 minutes or until a toothpick comes out clean.
  8. Cool the donuts in the pan for 5 minutes before transferring to a wire rack.
  9. Make the glaze by whisking powdered sugar, almond milk, melted dairy-free butter, and vanilla extract together until smooth.
  10. Glaze each cooled donut and allow to set.

Notes

These donuts can be stored in an airtight container for up to 3 days or refrigerated for about a week.
