1 medium onion, chopped to match chicken size

1 zucchini, sliced lengthwise into quarters, then chopped

2 tbsp extra virgin olive oil

1 tsp garlic powder

1 tsp smoked paprika

1 tsp dried oregano

1 tsp cumin

1 tsp sea salt (or to taste)

¼ tsp freshly ground pepper


Instructions

Preheat oven to 400°F (200°C).

 

In a large bowl, combine chicken, zucchini, and onion.

 

Drizzle with olive oil and sprinkle with all the spices, salt, and pepper.

 

Toss everything until evenly coated.

 

Spread mixture onto a baking sheet in a single layer.
