- 1 cup strawberries, hulled and sliced
- 1 large English cucumber, thinly sliced
- 1/4 cup crumbled feta or goat cheese (optional)
- 2 tbsp chopped fresh mint or basil
- 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
- 1 tbsp fresh lemon juice or balsamic vinegar
- 1 tsp honey or maple syrup
- 2 tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Prepare the ingredients by rinsing strawberries and cucumbers. Hull the strawberries and slice them into your preferred shapes.
- Chop the herbs and nuts, toasting the nuts if desired.
- Make the dressing by whisking together lemon juice, honey, and olive oil.
- Combine the strawberries, cucumbers, herbs, and nuts in a large bowl. Drizzle with dressing and toss gently.
- Chill the salad for about 10 minutes before serving.
Notes
To avoid a watery salad, pat cucumbers dry after slicing. Serve as a side or on greens for a fuller meal.
