Ingredients

  • 1 large English cucumber, thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Prepare the ingredients by rinsing strawberries and cucumbers. Hull the strawberries and slice them into your preferred shapes.
  2. Chop the herbs and nuts, toasting the nuts if desired.
  3. Make the dressing by whisking together lemon juice, honey, and olive oil.
  4. Combine the strawberries, cucumbers, herbs, and nuts in a large bowl. Drizzle with dressing and toss gently.
  5. Chill the salad for about 10 minutes before serving.

Notes

To avoid a watery salad, pat cucumbers dry after slicing. Serve as a side or on greens for a fuller meal.
