Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the potatoes into 1-inch cubes.
- Place the cubed potatoes in a large bowl and drizzle with olive oil and sprinkle with seasonings.
- Use your hands to toss everything together until well coated.
- Transfer the seasoned potatoes to a baking sheet in a single layer.
- Pop the baking sheet in the preheated oven and roast for about 25-30 minutes, tossing halfway through.
- Check for doneness; potatoes should be fork-tender and crispy.
- Broil for an additional 2–3 minutes for extra crispiness if desired.
