Description

Crispy, golden wedges of potato infused with zesty lemon, garlic, and oregano, reminiscent of traditional Greek flavors.


Ingredients

  • 2 pounds potatoes, cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut your potatoes into wedges.
  3. Whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a large mixing bowl.
  4. Toss the potato wedges into the marinade and mix well.
  5. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
  6. Roast the potatoes in your preheated oven for about 45 minutes, tossing halfway through.
  7. Check for doneness; they should be golden brown and fork-tender.
  8. Garnish with fresh parsley before serving.
