- 2 cups White Beans (Cannellini or Great Northern)
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 tablespoons Olive Oil
- 2 cups Seasonal Vegetables (carrots, celery, or kale)
- 2 teaspoons Herbs (Thyme, Rosemary, or Bay Leaves)
- Salt, to taste
- Black Pepper, to taste
- 4–6 cups Broth (vegetable or chicken)
- ½ cup Cream (optional)
Instructions
- Prep the Beans (if using dried): Soak the beans overnight, then drain and rinse. Cook them until tender, about 1-2 hours.
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent, about 5-7 minutes. Then add garlic and sauté for another 1-2 minutes.
- Add the Veggies: Stir in seasonal vegetables and cook for 5 minutes until they get a bit tender.
- Combine the Beans: Stir in canned or cooked dried beans, along with the herbs, salt, and pepper.
- Pour in the Broth: Add enough broth to cover the mixture, about 4-6 cups. Bring to a simmer and cook for 20-25 minutes.
- Blend for Creaminess: Use an immersion blender to blend the soup to your desired consistency.
- Finishing Touches: Stir in cream if desired and adjust seasoning. Serve warm.
Notes
This soup can be personalized with different seasonal vegetables or garnishes. For a vegan option, substitute cream with coconut milk.
