Creamy Parmesan Rice

Description

A rich and creamy side dish, perfect for pairing with a variety of main dishes.


Ingredients

  • 1 cup long grain white rice
  • 4 tablespoons butter
  • 1 small onion, finely diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 1/4 cups chicken stock
  • 1 1/2 cups milk, divided
  • 1 tablespoon lemon juice
  • 1/2 cup finely grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Begin by rinsing your long-grain white rice under cold water.
  2. In a medium-sized pot, melt 4 tablespoons of butter over medium heat.
  3. Add the finely diced onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the rinsed rice for 1-2 minutes to coat it with butter.
  5. Sprinkle in 1/2 teaspoon of garlic powder and 1/2 teaspoon of salt, then stir well.
  6. Pour in the chicken stock and 1 cup of milk, stirring everything together.
  7. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot.
  8. Let it simmer for about 20 minutes without lifting the lid.
  9. Remove from heat and let it rest covered for another 5 minutes.
  10. Add the remaining 1/2 cup of milk, 1 tablespoon lemon juice, and 1/2 cup parmesan cheese, then stir gently until combined.
  11. Sprinkle chopped parsley on top before serving.

Notes

Leftovers can be reshaped into risotto with a splash of broth and more parmesan.
