Ingredients

- 1 cup long grain white rice
- 4 tablespoons butter
- 1 small onion, finely diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 1/4 cups chicken stock
- 1 1/2 cups milk, divided
- 1 tablespoon lemon juice
- 1/2 cup finely grated parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Begin by rinsing your long-grain white rice under cold water.
- In a medium-sized pot, melt 4 tablespoons of butter over medium heat.
- Add the finely diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the rinsed rice for 1-2 minutes to coat it with butter.
- Sprinkle in 1/2 teaspoon of garlic powder and 1/2 teaspoon of salt, then stir well.
- Pour in the chicken stock and 1 cup of milk, stirring everything together.
- Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot.
- Let it simmer for about 20 minutes without lifting the lid.
- Remove from heat and let it rest covered for another 5 minutes.
- Add the remaining 1/2 cup of milk, 1 tablespoon lemon juice, and 1/2 cup parmesan cheese, then stir gently until combined.
- Sprinkle chopped parsley on top before serving.
Notes
Leftovers can be reshaped into risotto with a splash of broth and more parmesan.
