A delicious low-carb casserole featuring hearty chicken, crispy bacon, and vibrant broccoli in a creamy, cheesy sauce.

- 5 cups broccoli florets
- 8 slices cooked turkey bacon, chopped
- 4 cups cooked chicken, shredded or diced
- 3 cloves garlic, minced
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
- 1 cup ranch dressing
- ½ cup shredded cheddar (for topping)
- ½ cup shredded mozzarella (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Prep your broccoli by rinsing and chopping it into bite-sized florets, then blanch in boiling water for 2-3 minutes.
- Cook the turkey bacon in a medium skillet until crispy, then drain on paper towels.
- Mix the shredded chicken, minced garlic, mozzarella, cheddar, ranch dressing, and half of the crispy bacon in a large mixing bowl.
- Add the blanched broccoli gently into the mixture.
- Prepare a lightly greased 9×13-inch baking dish and pour in the chicken and broccoli mixture.
- Top with the remaining cheddar and mozzarella cheese and the rest of the bacon.
- Bake for about 25-30 minutes until bubbly and golden brown.
- Serve after letting it cool for 5-10 minutes.
Notes
You can prepare this casserole in advance and keep it in the fridge. Just allow extra baking time if it’s cold from the fridge.
