A delicious low-carb casserole featuring hearty chicken, crispy bacon, and vibrant broccoli in a creamy, cheesy sauce.


Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your broccoli by rinsing and chopping it into bite-sized florets, then blanch in boiling water for 2-3 minutes.
  3. Cook the turkey bacon in a medium skillet until crispy, then drain on paper towels.
  4. Mix the shredded chicken, minced garlic, mozzarella, cheddar, ranch dressing, and half of the crispy bacon in a large mixing bowl.
  5. Add the blanched broccoli gently into the mixture.
  6. Prepare a lightly greased 9×13-inch baking dish and pour in the chicken and broccoli mixture.
  7. Top with the remaining cheddar and mozzarella cheese and the rest of the bacon.
  8. Bake for about 25-30 minutes until bubbly and golden brown.
  9. Serve after letting it cool for 5-10 minutes.

Notes

You can prepare this casserole in advance and keep it in the fridge. Just allow extra baking time if it’s cold from the fridge.
