Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your broccoli by rinsing and chopping it into bite-sized florets, then blanch in boiling water for 2-3 minutes and drain.
  3. Cook the turkey bacon in a skillet until crispy, then drain on paper towels.
  4. Mix the shredded chicken, minced garlic, mozzarella, cheddar, ranch dressing, and half of the crispy bacon in a large bowl.
  5. Add the blanched broccoli and gently fold it in.
  6. Prepare a 9×13-inch baking dish by greasing it, then pour in the mixture.
  7. Top with remaining cheddar and mozzarella cheese and the rest of the bacon.
  8. Bake for 25-30 minutes, until the cheese is bubbly and golden brown.
  9. Serve after cooling for 5-10 minutes.

Notes

For a vegetarian option, replace chicken with tempeh or chickpeas. It can be made in advance and stored in the fridge before baking.
