- 4 chicken thighs
- 1 cup heavy cream
- 2 tablespoons mixed herbs (such as thyme, rosemary, and parsley)
- Salt and pepper to taste
- 2 pounds potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, peeled and sliced
- 2 tablespoons honey
- 1 tablespoon olive oil
Instructions
- Prepare the chicken: Season the chicken thighs with salt and pepper. Heat a large skillet over medium-high heat and add olive oil. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
- Make the creamy sauce: Once the chicken is browned, flip it over and add heavy cream and mixed herbs. Bring to a gentle simmer.
- Cook the chicken through: Reduce heat to low, cover, and cook for 15-20 minutes until internal temperature reaches 165°F (75°C).
- Prep the mashed potatoes: Boil salted water, add diced potatoes, and cook until fork-tender, about 15-20 minutes. Drain and return to the pot.
- Mash ’em up: Add butter and milk to the potatoes. Mash until creamy and smooth; season with salt and pepper.
- Glaze the carrots: Heat a separate skillet over medium heat, add carrots, olive oil, salt, and water. Steam for about 5 minutes.
- Finish the carrots: Remove lid, add honey, and cook uncovered for another 3-4 minutes until caramelized.
- Plate it up: Serve mashed potatoes, top with chicken and sauce, and add honey-glazed carrots.
