- 2 cups sweet corn (fresh or canned)
- 1 large cucumber, diced
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste

Instructions
- Prepare the Corn: If you’re using fresh corn, start by removing the kernels from the cob. Stand the ear of corn upright in a bowl to catch everything. If you’re using canned corn, just drain and rinse it.
- Dice the Cucumber: Wash the cucumber and dice it into bite-sized pieces. Rustic pieces are fine!
- Make the Dressing: In a mixing bowl, combine the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper. Stir until smooth and creamy.
- Combine Everything: In a large bowl, mix the corn, diced cucumber, and the creamy dressing together. Toss gently to combine.
- Serve: Scoop into serving dishes and top with chopped cilantro.
Notes
Let the salad rest for 15 minutes at room temperature or refrigerate for 30 minutes before serving to enhance flavors.
