Instructions

  1. Prepare the Corn: If you’re using fresh corn, start by removing the kernels from the cob. Stand the ear of corn upright in a bowl to catch everything. If you’re using canned corn, just drain and rinse it.
  2. Dice the Cucumber: Wash the cucumber and dice it into bite-sized pieces. Rustic pieces are fine!
  3. Make the Dressing: In a mixing bowl, combine the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper. Stir until smooth and creamy.
  4. Combine Everything: In a large bowl, mix the corn, diced cucumber, and the creamy dressing together. Toss gently to combine.
  5. Serve: Scoop into serving dishes and top with chopped cilantro.
