Instructions

  1. Prepare the corn: If you’re using fresh corn, start by removing the kernels from the cob. If you’re using canned corn, just drain and rinse it.
  2. Dice the cucumber: Wash and dice it into bite-sized pieces.
  3. Make the dressing: Combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a mixing bowl and stir until smooth.
  4. Combine everything: Mix the corn, diced cucumber, and the creamy dressing in a large bowl. Toss gently to coat.

Notes
