- 1 large cucumber, diced
- 1/2 cup mayonnaise

Instructions
- Prepare the corn: If you’re using fresh corn, start by removing the kernels from the cob. If you’re using canned corn, just drain and rinse it.
- Dice the cucumber: Wash and dice it into bite-sized pieces.
- Make the dressing: Combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a mixing bowl and stir until smooth.
- Combine everything: Mix the corn, diced cucumber, and the creamy dressing in a large bowl. Toss gently to coat.
- Serve: Transfer to a serving dish and garnish with cilantro.
Notes
For optimal freshness, add the dressing just before serving. You can substitute mayonnaise with Greek yogurt for a lighter version.
