Description

A comforting Cheesy Baked Gnocchi Casserole with Italian sausage and fresh spinach, topped with gooey cheeses and cherry tomatoes.


Ingredients

  • 1 package potato gnocchi
  • 1 pound Italian sausage
  • 2 cups creamy tomato sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the Italian sausage in a skillet over medium heat, crumbling as it cooks, for 5–7 minutes.
  3. Add the fresh spinach and stir until wilted, about 2 minutes.
  4. Mix in the creamy tomato sauce and simmer for 3–4 minutes.
  5. Prepare the gnocchi by boiling in salted water for 2-3 minutes until they float, then drain.
  6. Assemble the mixture in a bowl, combining gnocchi, sausage-spinach sauce, half the mozzarella, ricotta, and half the Parmesan.
  7. Transfer to a greased 9×13-inch baking dish.
  8. Top with remaining mozzarella, Parmesan, and arrange cherry tomatoes on top.
  9. Bake for 20-25 minutes until the cheese is bubbly and golden brown.

Notes

Consider adding crushed red pepper for heat or drizzling pesto on top before baking for a twist.
