- 1 package potato gnocchi
- 1 pound Italian sausage
- 2 cups creamy tomato sauce
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 cup cherry tomatoes
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the Italian sausage in a skillet over medium heat, crumbling as it cooks, for 5–7 minutes.
- Add the fresh spinach and stir until wilted, about 2 minutes.
- Mix in the creamy tomato sauce and simmer for 3–4 minutes.
- Prepare the gnocchi by boiling in salted water for 2-3 minutes until they float, then drain.
- Assemble the mixture in a bowl, combining gnocchi, sausage-spinach sauce, half the mozzarella, ricotta, and half the Parmesan.
- Transfer to a greased 9×13-inch baking dish.
- Top with remaining mozzarella, Parmesan, and arrange cherry tomatoes on top.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
Notes
Consider adding crushed red pepper for heat or drizzling pesto on top before baking for a twist.
