Description

A homemade version of Taco Bell’s classic Mexican Pizza, featuring layers of seasoned beef, zesty beans, and gooey cheese.


Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/Monterey Jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. Cook your meat filling in a large skillet over medium heat, browning the ground beef until no longer pink, about 5-7 minutes.
  2. Add taco seasoning and water to the cooked meat, stirring well and letting it simmer for about 5 minutes.
  3. Prepare the refried beans by mixing with 1/4 cup of water in a bowl until smooth.
  4. Fry the tortillas in oil over medium heat for 1-2 minutes on each side until golden.
  5. Assemble the pizzas by layering a tortilla with refried beans, seasoned meat, enchilada sauce, cheese, tomatoes, and green onions.
  6. Add another tortilla on top and repeat the layering process with more layers.
  7. Bake the assembled pizzas on a baking sheet in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is bubbly and golden.
  8. Serve hot, sliced into wedges, topped with sour cream or guacamole if desired.

Feel free to customize with additional toppings like jalapeños or bell peppers for added flavor!
