Description
A homemade version of Taco Bell’s classic Mexican Pizza, featuring layers of seasoned beef, zesty beans, and gooey cheese.
Ingredients
Scale
- 1 lb ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or 2 Tbsp homemade blend)
- 2/3 cup water
- 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
- 1 can (15 oz) refried beans
- 1/4 cup water
- 1 cup red enchilada sauce (or mild taco sauce)
- 2 cups shredded Mexican blend cheese (or cheddar/Monterey Jack)
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup sliced black olives (optional)
- Oil for frying (or cooking spray if baking)
Instructions
- Cook your meat filling in a large skillet over medium heat, browning the ground beef until no longer pink, about 5-7 minutes.
- Add taco seasoning and water to the cooked meat, stirring well and letting it simmer for about 5 minutes.
- Prepare the refried beans by mixing with 1/4 cup of water in a bowl until smooth.
- Fry the tortillas in oil over medium heat for 1-2 minutes on each side until golden.
- Assemble the pizzas by layering a tortilla with refried beans, seasoned meat, enchilada sauce, cheese, tomatoes, and green onions.
- Add another tortilla on top and repeat the layering process with more layers.
- Bake the assembled pizzas on a baking sheet in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is bubbly and golden.
- Serve hot, sliced into wedges, topped with sour cream or guacamole if desired.
Notes
