Ingredients

  • 2 cups coconut milk
  • 1 cup freshly squeezed lime juice
  • 1/4 cup sugar
  • Ice cubes
  • Optional: white rum

Instructions

  1. Gather all your ingredients in one place, and don’t forget a trusty blender!
  2. Juice the limes by rolling them on the countertop and squeezing out about a cup of fresh juice.
  3. Pour the coconut milk and lime juice into your blender. Add in the sugar and white rum if desired.
  4. Toss in the ice cubes. Use frozen coconut milk ice cubes for added flavor.
  5. Blend on high until well combined and frothy.
  6. Taste and adjust sweetness or tartness by adding additional sugar or lime juice.
  7. Pour your Coconut Lemonade into chilled glasses and garnish with a lime slice and mint if desired.
