Description

A refreshing and vibrant pasta salad with a zesty cilantro lime dressing that’s perfect for any occasion.


Ingredients

  • 2 cups rotini or farfalle pasta
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup corn, fresh or thawed frozen
  • 1/2 cup cilantro, chopped
  • 1 avocado, diced
  • 1/2 cup Greek yogurt
  • 1/4 cup lime juice, freshly squeezed
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente (8-10 minutes).
  2. Prepare the veggies by chopping the cucumber, rinsing the chickpeas, and slicing the avocado.
  3. Make the dressing by combining Greek yogurt, lime juice, salt, and pepper in a bowl.
  4. Mix the cooked pasta, chickpeas, corn, cucumber, avocado, and cilantro in a large bowl.
  5. Pour the dressing over the salad and toss gently.
  6. Adjust the consistency with reserved pasta water if the salad is too thick.
  7. Taste and add more lime juice, salt, or pepper as desired.
  8. Chill in the fridge for at least 30 minutes before serving.

Notes

Serve with a garnish of cilantro or lime wedges for added flavor.
