Ingredients

- 2 cups Broccoli florets
- 2 cups Cauliflower florets
- 1 cup Sweet corn (fresh, frozen, or canned)
- 4 slices Bacon (or turkey bacon)
- 1 cup Carrots (sliced or shredded)
- 1 cup Cheddar cheese (shredded)
- 1/2 cup Mayonnaise
- Salt and pepper to taste
Instructions
- Wash the broccoli and cauliflower, cutting them into bite-sized florets.
- Peel and slice your carrots into thin rounds or grate them.
- Cut the kernels off the corn cob if using fresh corn.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
- Transfer the cooked bacon to a paper towel-lined plate and chop into bite-sized pieces.
- Combine the chopped broccoli, cauliflower, corn, carrots, and bacon in a large mixing bowl.
- Mix the mayonnaise with salt and pepper, then toss with the salad until evenly coated.
- Fold in the cheddar cheese.
- Chill the salad in the fridge for at least 30 minutes before serving.
Notes
For a lighter version, swap mayonnaise with Greek yogurt or avocado. Add a splash of lemon juice for extra zing!
