Ingredients

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 cup Sweet corn (fresh, frozen, or canned)
  • 4 slices Bacon (or turkey bacon)
  • 1 cup Carrots (sliced or shredded)
  • 1 cup Cheddar cheese (shredded)
  • 1/2 cup Mayonnaise
  • Salt and pepper to taste

Instructions

  1. Wash the broccoli and cauliflower, cutting them into bite-sized florets.
  2. Peel and slice your carrots into thin rounds or grate them.
  3. Cut the kernels off the corn cob if using fresh corn.
  4. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  5. Transfer the cooked bacon to a paper towel-lined plate and chop into bite-sized pieces.
  6. Combine the chopped broccoli, cauliflower, corn, carrots, and bacon in a large mixing bowl.
  7. Mix the mayonnaise with salt and pepper, then toss with the salad until evenly coated.
  8. Fold in the cheddar cheese.
  9. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

For a lighter version, swap mayonnaise with Greek yogurt or avocado. Add a splash of lemon juice for extra zing!
