Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup blueberries
  • 1 cup feta cheese, crumbled
  • 4 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts or pecans, chopped (optional)
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by shredding or dicing it if not already done.
  2. Toss the mixed greens in a large mixing bowl.
  3. Add the shredded chicken, blueberries, crumbled feta cheese, and sliced red onions.
  4. Sprinkle in the chopped nuts if using.
  5. Drizzle the balsamic vinaigrette over the salad.
  6. Toss the salad gently with tongs to coat everything evenly.

Notes
