- 1 to 1 1/2 cups colby jack cheese, grated
Instructions
- Combine the chicken broth and water in a medium-sized pot. Bring it to a gentle boil.
- Pour in the orzo and stir. Cook uncovered on medium heat for about 10-12 minutes, until al dente.
- Reduce the heat to low, add butter, salt, and pepper. Stir well.
- Gradually fold in the grated colby jack cheese until melted and smooth.
- Add the lemon zest and stir to combine. Adjust seasoning as needed.
- Serve the cheesy orzo pasta into bowls, optionally topping with more cheese.
