- 2 cups cooked chicken (shredded or cubed)
- 3 cups cooked rice (white or brown)
- 2 cups broccoli florets (fresh or frozen, lightly steamed)
- 1 can (10.5 oz / ~300 g) cream of chicken soup
- 1/2 cup sour cream (or plain Greek yogurt)
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional, for topping)
- 2 tablespoons butter (melted, optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the base ingredients in a large mixing bowl: cooked chicken, cooked rice, broccoli florets, cream of chicken soup, sour cream, and milk.
- Season it up by adding garlic powder, onion powder, paprika, salt, and pepper. Mix until evenly distributed.
- Add in 1 cup of shredded cheddar cheese and incorporate it into your mixture.
- Transfer the mixture to a greased 9×13-inch baking dish and spread it out evenly.
- Top with a breadcrumb mixture (if using) and the remaining cheese.
- Bake for 25-30 minutes, or until bubbling and cheese has melted. Broil for an additional 2-3 minutes for a crispy top if desired.
- Let it cool for 5-10 minutes before serving.
Notes
This casserole can be made ahead of time and stored in the fridge. It also freezes well.
