- 2 cups powdered sugar
- 2 tablespoons lemon juice (for the frosting)
- 1 tablespoon lemon zest (for the frosting)
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt.
- Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, followed by vanilla, lemon juice, and lemon zest.
- Combine wet and dry ingredients, mixing until just combined, then fold in sour cream and milk.
- Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth.
- Fill cupcake liners with batter, add a scoop of cheesecake filling, and top with more cupcake batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Make the lemon frosting by mixing softened butter and powdered sugar, then adding lemon juice and zest.
- Frost cooled cupcakes with lemon frosting and garnish with lemon zest or slices.
