- 1 stick unsalted butter (8 tablespoons)
- 1 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1.5 cups grated sharp cheddar cheese
- 1/4 teaspoon ground black pepper
- Pinch cayenne pepper (optional)
Instructions
- Prep your ingredients: Gather all your ingredients and preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Combine water and butter: In a medium saucepan, combine the cup of water, stick of unsalted butter, and salt. Heat over medium until the butter is melted and the mixture is just starting to simmer.
- Add flour: Once it’s bubbling, remove it from the heat and add the cup of flour all at once. Stir vigorously until a dough forms.
- Cook the dough: Return the pan to the heat and cook the dough for another minute, stirring constantly.
- Add eggs: Remove the pan from heat and let it cool for about 5 minutes. Then, one at a time, add the eggs, mixing well after each addition.
- Incorporate cheese and spices: Stir in the grated cheddar cheese, ground black pepper, and cayenne, if using.
- Shape the puffs: Using a spoon or pastry bag, drop tablespoon-sized balls of dough onto your prepared baking sheet.
- Bake: Slide the baking sheet into your preheated oven and bake for about 25–30 minutes, or until they’re puffed and golden brown.
- Cool and serve: Let them cool slightly before enjoying.

Serve warm; best paired with a dipping sauce like spicy aioli or creamy ranch.
