Ingredients

  • 1 stick unsalted butter (8 tablespoons)
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1.5 cups grated sharp cheddar cheese
  • 1/4 teaspoon ground black pepper
  • Pinch cayenne pepper (optional)

Instructions

  1. Prep your ingredients: Gather all your ingredients and preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Combine water and butter: In a medium saucepan, combine the cup of water, stick of unsalted butter, and salt. Heat over medium until the butter is melted and the mixture is just starting to simmer.
  3. Add flour: Once it’s bubbling, remove it from the heat and add the cup of flour all at once. Stir vigorously until a dough forms.
  4. Cook the dough: Return the pan to the heat and cook the dough for another minute, stirring constantly.
  5. Add eggs: Remove the pan from heat and let it cool for about 5 minutes. Then, one at a time, add the eggs, mixing well after each addition.
  6. Incorporate cheese and spices: Stir in the grated cheddar cheese, ground black pepper, and cayenne, if using.
  7. Shape the puffs: Using a spoon or pastry bag, drop tablespoon-sized balls of dough onto your prepared baking sheet.
  8. Bake: Slide the baking sheet into your preheated oven and bake for about 25–30 minutes, or until they’re puffed and golden brown.
  9. Cool and serve: Let them cool slightly before enjoying.
