Instructions
- Prep your ingredients: Gather all your ingredients on the counter.
- Blend the dates: Toss the pitted dates into a food processor and blend until they form a sticky paste.
- Add walnuts and carrots: Throw in the walnuts and shredded carrots. Pulse until mixed but still has some texture.
- Spice it up: Add cinnamon, nutmeg, oats (if using), coconut oil, and salt. Blend until well combined.
- Taste test: Adjust spices or sweetness if needed.
- Roll ‘em up: Roll the mixture into small balls, about 1 inch in diameter.
- Chill (optional): Place the energy balls on a parchment-lined plate and refrigerate for about 30 minutes.
