- 1 lb flank steak
- 2 cups butternut squash, diced
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: fresh herbs for garnish
Instructions
- Prep your ingredients by preheating your oven to 400°F (200°C) and dicing the butternut squash.
- Season the squash in a bowl with 1 tablespoon of olive oil, salt, and pepper. Lay them on a baking sheet and roast for about 25-30 minutes.
- Infuse the steak with the remaining olive oil, minced garlic, thyme, and rosemary.
- Sear the steak in a skillet over medium-high heat for 4-5 minutes on each side.
- Rest the cooked steak for 5-10 minutes on a cutting board.
- Assemble the bowls by layering roasted squash and sliced steak. Garnish with fresh herbs if desired.
