Description

A comforting dish made with tender flank steak and sweet butternut squash, perfect for a satisfying meal.


Ingredients

  • 1 lb flank steak
  • 2 cups butternut squash, diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. Prep your ingredients by preheating your oven to 400°F (200°C) and dicing the butternut squash.
  2. Season the squash in a bowl with 1 tablespoon of olive oil, salt, and pepper. Lay them on a baking sheet and roast for about 25-30 minutes.
  3. Infuse the steak with the remaining olive oil, minced garlic, thyme, and rosemary.
  4. Sear the steak in a skillet over medium-high heat for 4-5 minutes on each side.
  5. Rest the cooked steak for 5-10 minutes on a cutting board.
  6. Assemble the bowls by layering roasted squash and sliced steak. Garnish with fresh herbs if desired.
