- 1/3 cup unsalted Butter
- 1/2 Medium Yellow Onion, finely diced
- 1 1/2 cups Long Grain White Rice
- 3 cups Good Quality Chicken Stock (or Vegetable Broth)
- Salt & Pepper, to taste
- 2–3 Bay Leaves
Instructions
- Sauté the onions in melted butter until translucent and caramelized, about 3-5 minutes.
- Add the rice and stir to coat in butter for about 2-3 minutes.
- Pour in the chicken stock (or vegetable broth), add bay leaves, and season with salt and pepper. Bring to a gentle boil.
- Simmer covered on low heat for about 18-20 minutes.
- Fluff the rice with a fork after letting it rest for 5 minutes and discard bay leaves.
Notes
Butter rice pairs well with grilled chicken, beef stew, stir-fries, or roasted veggies. Add fresh herbs for a pop of color.
