Ingredients

- 2–3 lbs Chuck Roast
- 1 Onion, chopped
- 4 cloves Garlic, minced
- 2 tbsp Olive Oil
- 4 Carrots, chopped
- 2 Potatoes, cubed
- 2 Parsnips, chopped
- 1 tsp Fresh Thyme (or 1/3 tsp dried)
- 1 tsp Fresh Rosemary (or 1/3 tsp dried)
- Salt, to taste
- Black Pepper, to taste
- 3 cups Beef Broth
- 1/2 cup Heavy Cream (optional)
Instructions
- Prepare your ingredients: Chop your onions, garlic, and any seasonal vegetables.
- Sear the roast: Heat olive oil in a skillet over medium-high heat. Season the meat and sear for 3-4 minutes on each side until golden brown.
- Deglaze the pan: Add a splash of broth or wine to scrape up brown bits.
- Layer in the slow cooker: Place the roast in, then layer onions, garlic, and vegetables around it.
- Season and add liquid: Add herbs, salt, pepper, and pour in enough broth to cover two-thirds of the roast.
- Set the slow cooker: Cook on low for 8-10 hours or high for 4-6 hours.
- Check for doneness: The roast should be fork-tender. If it’s tough, cook longer.
- Shred and serve: Shred the roast, return to juices, and serve warm with veggies.
