Ingredients
2 chicken breasts
2 cups cherry tomatoes, halved
¼ cup + 2 tbsp fresh basil leaves, chopped
1 tbsp balsamic vinegar
1 tbsp extra-virgin olive oil
2 garlic cloves, minced
2 tsp salt
1 tsp black pepper
2 tbsp Italian seasoning
¼ cup butter
12 oz spaghetti
1–2 tbsp balsamic glaze (for finishing
¼ cup grated Parmesan cheese
Instructions
Cook spaghetti according to package instructions. Drain, toss with butter, and set aside.
In a bowl, combine cherry tomatoes, ¼ cup basil, balsamic vinegar, olive oil, garlic, ½ tsp salt, and ½ tsp pepper. Let marinate while you prepare the chicken.
Season chicken breasts with Italian seasoning, 1½ tsp salt, and ½ tsp pepper.
In a skillet over medium heat, cook chicken in a bit of oil until golden and cooked through (about 5–7 minutes per side). Let rest, then slice.
Toss spaghetti with the tomato mixture and top with sliced chicken.
Drizzle with balsamic glaze, sprinkle with Parmesan and extra basil. Serve warm or room temp.
